Yummy!

Sorry I haven't posted lately….I’ve been busy with other things….one of them cooking with my granddaughter Kayla. I’m visiting with my son and his family this week. We’re cooking and baking and stamping and sewing….we’re doing it all!!!

Can you guess what we’ve made here? One of my Son’s favorites!!!

Homemade from scratch Manicotti…I make the shells and everything. Kayla was a huge help in making the Manicotti with me. She mixed the filling and cracked the eggs and did the mixer for the shells! So really, she just about did it all.  It always amazes me how quickly she learns and remembers…..the child REMEMBERS EVERYTHING!!!! So watch what you so….hehe

I’d like to share the recipe with you.

Manicotti

Shell:

4 cups all purpose flour

2 cups lukewarm water

1 tsp salt

6 eggs

1 T. Veg. Oil

Mix with electric Mixer. Spoon into heated small cast iron pan and quickly move around to coat the bottom of the pan. I use the backside of the spoon. when it look dry remove from the pan. Place on wax paper. Add 2-3 Teaspoons of the mixture below to each shell and roll into a Manicotti.

Filling:

2 lbs. Ricotta Cheese

2 eggs

8 ox. Shredded Mozzarella Cheese

Chopped Parsley 1-2 tsps.

Salt and pepper to taste

Mix all together

This makes about 40 Manicotti. All you have to do is add your own sauce to the bottom of  a baking dish add Manicotti, more sauce and more Mozzarella. Cover with foil and cook about 30 minutes on 350. That’s it.

These freeze beautifully and are so easy when you can just pull them out of the freezer!!

tip: Freeze on Cookie sheets and then when frozen place in zip Lock Bags…this way they won’t stick together.
